Green peas omelette
Ingredients:
- 5 eggs;
- 200g Sun Food green pea;
- 6 champion mushrooms;
- Half of a red/yellow bell pepper;
- Parsley;
- Salt;
- Pepper;
- 1 spoon of olive oil;
- Cheese/parmesan.
Method:
Draw off the pea, chop the mushrooms and the bell pepper and put them in a frying pan with a spoon of olive oil for 3-4 min. Turn off the fire and let them to cool down. Separate the white of the yellow. Add a pinch of salt in the whites and mix them well.
Mix the yellows for 2-3 min and stir them with the vegetables. Add salt and pepper as you like it. Then add the vegetable mix, the whites and chopped parsley and mix them.
Then add the mixture in a frying pan and then put in the preheated oven at 200 C for 15 min, after baking it, sprinkle some grated parmesan.
