Lamb with zucchini


  • 4 medium zucchini;
  • 400g lamb or chicken;
  • 400g Sun Food chopped tomatoes;
  • 2 binds of green garlic;
  • 2-3 grains of rosemary;
  • 2 leaves of bay;
  • 50 ml olive oil;
  • 50 g butter;
  • parsley;
  • salt, pepper;
  • 1 spoon of ground coriander seeds.


Chop the meat and flavour it with coriander, fry it in butter for 1 min, stirring it. Chop the zucchini in 2 halves, boil it in boiling water, throw the core and fill it with the fried lamb meat  . put the zucchini in a pan.

Fry the chopped garlic and the onion in the olive oil. After 2-3 min add sf tomatoes, their juice and the chopped rosemary, the leaves of bay and flavor it with salt and pepper.

Boil this sauce for 4-5 min then pour it over the zucchini. Put the pan into the oven and cook it for 30 min. serve 2 halves for a serving, spray it with the sauce and spread over chopped parsley.
